The "midwife" and the flat oyster

Hélène Cochet, biologist specialising in mariculture, has been studying the European flat oyster for twenty years, the combat of her life. The only oyster native to France, yet virtually unknown to the general public. In a generation it has become forgotten, gradually replaced by the Pacific oyster from Asia.
